Bone in Breasts, Boneless Breast Roasts, and smaller petite turkeys, are in limited supply, so these will be available in the meat freezer or meat case.

Everything we are offering will be previously frozen.

We will begin thawing all reserved birds Thursday 21st, so please let us know if you prefer your reserved turkey remain frozen.  

Roasts, Bone-in breasts, and boneless breasts will be sold out of our meat freezer or thawed and sold in the meat case.  

Frozen bird are available now. If you need to cook your turkey in the next couple of days, we recommend softening the bird in your refrigerator. Below are the USDA’s recommended refrigerator thawing times:

Refrigerator Thawing Times
 4 to 12 pounds – 1 to 2 days
 12 to 16 pounds – 2 to 3 days
 16 to 20 pounds – 3 to 4 days

If you need to cook your turkey in less than one day, we recommend softening your bird in a cold water bath. Allow about 30 minutes per pound.

Submerge the turkey (in the original bag) in cold tap water. Change the water every 30 minutes until the turkey is thawed. Cook the turkey immediately after it is thawed. Below are the USDA’s recommended cold water thawing times:

Cold Water Thawing Times
 4 to 12 pounds – 2 to 6 hours
 12 to 16 pounds – 6 to 8 hours
 16 to 20 pounds – 8 to 10 hours

Easy Turkey Gravy

Roast Turkey Breast - Dry Brine Recipe

Dry Brine:
For every 5lbs of turkey you will need:
  • 1 Tbsp kosher salt
  • 1 tsp dried herbs (such as poultry or italian seasoning)
  • ¼ tsp ground black pepper

Ingredients:

Instructions:

  1. To allow for more even cooking, remove the turkey breast from the refrigerator one hour before cooking. Preheat the oven to 325°F. Coat a 9”x13” baking dish with cooking spray or neutral oil. Place the sliced onion, celery, and carrots in an even layer in the dish.
  2. In a small bowl, mix together softened butter, fresh herbs, garlic powder, pepper, and salt.
  3. Rub half of the butter under the loosened skin of the turkey breast. Rub remaining butter all over the turkey. Place turkey on top of the vegetables in the prepared baking dish. Insert an oven-safe thermometer in the thickest part of the breast, running parallel to the bone.
  4. Roast on the middle rack for 20 minutes per pound (from about 1½-3 hours in total, depending on the size of the turkey breast). Remove from the oven when the internal temperature reaches 160°F.
  5. Make a loose tent over the cooked turkey with foil and allow it to rest for at least 20 minutes. The internal temperature will continue to rise while it rests. Carve and serve with our Easy Turkey Gravy.

Turkey is done when the internal temperature reaches 165°F.

Dry Brine:

For every 5lbs of turkey you will need:

Brining Process:
  1. Remove thawed turkey from packaging and pat dry.
  2. Rub all over with the salt mixture. Carefully loosen the skin and rub salt directly on the meat.
  3. Place in the refrigerator and chill uncovered for at least 48 hours, and up to 72.
  4. No need to rinse off salt before roasting!
  5. The turkey will appear dried up and desiccated, but will roast up golden and flavorful.
